  • 1 liter water (about 4 cups)
  • Cooked chicken bones (leftover roasted bones) or 4 cups chicken broth
  • 1 small bunch cilantro (or parsley), tied together for easy removal
  • 150 g white cheese, crumbled (feta-style or any mild white cheese that melts reasonably)
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • Salt and black pepper, to taste

How to make creamy cheese soup

1) Build the base (onion + garlic + butter)

In a large pot over medium heat, melt the butter. Add the chopped onion and cook until softened and lightly golden. Stir in the minced garlic for about 20–30 seconds, just until fragrant.

2) Add potatoes, herbs, and broth
